Required products :

2 tea cups zucchini, finely grated
2 tea cups carrots, finely grated
1/2 teaspoon brown sugar
1/2 teaspoon walnut oil
2 eggs
1/2 cup buttermilk
1 teaspoon vanilla extract
2 1/4 tea cups flour
1 tablespoon baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
pinch of salt

Method of preparation :

Mix the zucchini and carrots in a large bowl without squeezing them.
Add the eggs, buttermilk, oil, vanilla extract and sugar. Stir.
Add the flour, cinnamon, baking powder, nutmeg and salt.
Stir and let the dough stand for about 10 minutes.
Bake the waffles at a medium heat in a preheated waffle iron, adjusting the amount of dough to the size of the plate.
Serve them warm, garnished with your choice.
