How To Cook Crispy Zucchini In The Oven With Garlic And Parmesan - Recipe

Required products :

  • 2 medium zucchini
  • 2 eggs
  • 1 tablespoon salt
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian spice
  • 1/2 teaspoon garlic powder

Method of preparation :

  • Preheat oven to 220 degrees and cover a large baking tray with parchment paper.
  • Cut the zucchini lengthwise into thick slices, and each of them into 9 equal parts.
  • Transfer them to a colander, sprinkle with salt and let stand for about 30 minutes to drain.
  • Beat the eggs in a deep bowl.
  • In another bowl, mix the almond flour, parmesan and Italian spice.
  • Rinse the salt from the zucchini and dry them with kitchen paper.
  • Dip each piece in the eggs, then roll it in the almond mixture.
  • Arrange the zucchini in the pan and bake for about 25 minutes until golden brown.
  • Serve hot and enjoy.
