Beat the eggs well until foamy. Add the milk, season and combine.
Put the butter in a warm pan on low heat and melt it. Pour the eggs and wait for them to tighten slightly at the end, then push the edges towards the center and pour the still raw eggs on the edge of the pan. Repeat the same movement every 30 seconds until ready - cook them for about 6-8 minutes (eggs will still look slightly moist). Transfer them to a bowl.
Spread mustard on the cut side of the croissants. Divide the ham between all, put half a cup of eggs and 1/4 cup of cheddar. Close with the other half of the croissants.
Bake them for 8-10 minutes until the cheddar is melted.
