Learn how to cook "Croissants with tiramisu cream and homemade mascarpone". Delicious recipe.
Required products :
400 grams of sour cream with a fat content of at least 20% (or liquid with high fat content)
100 milliliters of fresh milk
1 teaspoon of lemon juice
500 grams of puff pastry
2 eggs
butter
50 grams of powdered sugar
50 milliliters of cold strong espresso
1 tablespoon of Amaretto
cocoa liqueur powder for sprinkling
Method of preparation :
Croissants
Roll out the dough into a layer 7-8 centimeters thick and cut into triangles. Put a small piece of butter in the middle of each. Then make a few cuts on the wide side of the triangles and shape the croissants by rolling them up, starting from there. Arrange them in a tray, the bottom of which you have covered with baking paper, cover them with a napkin and leave for 10 minutes.
Preheat oven to 180 degrees. Smear the surface of the croissants with fresh milk, using a brush for this purpose, and bake until golden (about 20-25 minutes).
Tiramisu Cream
Separate the yolks from the whites and beat the whites until thick.
Mix the powdered sugar with the yolks and add 250 grams of mascarpone (its preparation is described below), liqueur and coffee and mix everything well.
You should add the egg whites to the cream, do this slowly, stirring gently.
Put the finished mixture in the refrigerator for 2 hours, then sprinkle with cocoa powder.
Mascarpone
Pour the milk into the cream, stir and heat the combination to 70 degrees (do not allow to boil).
Add the lemon juice, stir and leave for a few more minutes on the stove - the cream should be cut (again without boiling).
Turn off the stove, but do not remove the pan for another 5-7 minutes.
Cover the colander with 2-3 layers of gauze and pour in the whipped cream. Allow the liquid to drain (about 40-50 minutes), then press to drain completely.
Store in the refrigerator in a container with a tightly closed lid.
Serve the croissants with tiramisu cream and mascarpone. Each of the finished products can be used alone or in combination with other foods.
