How To Cook Cuban Black Beans With Yellow Rice And Vegetables - Recipe

Required products :

  • 2 ripe bananas, peeled and cut diagonally into circles
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 300 grams of yellow rice (1 box)
  • 1 small hot pepper, cleaned and chopped
  • 1 diced red onion
  • 2 cans of black beans, drained
  • 1/4 tea cup of water
  • 1 teaspoon ground cumin
  • 4 radishes, cut into cubes
  • 1 ripe avocado, diced
  • coriander leaves
  • 1 lime, cut into slices

Method of preparation :

Preheat oven to 200 degrees. Cover the bottom of a baking tray with parchment paper. Arrange the banana rings in the pan and sprinkle with 1 tablespoon of olive oil and 1/2 teaspoon of sea salt. Bake until lightly browned for 16 to 18 minutes.

Prepare the rice according to the instructions on the package.

Heat 1 tablespoon olive oil in a pan over medium heat. Fry the hot pepper and 1/2 head of chopped red onion, stirring often for about 3 minutes or until softened. Pour the black beans, water, cumin and 1/2 teaspoon of salt and cook for 5-6 minutes until some of the liquid evaporates.

Serve the cooked rice in 4 bowls along with the mixture of black beans, roasted bananas, radishes and diced avocados. Sprinkle with fresh coriander leaves, the remaining 1/2 red onion and lime slices.
