How To Cook Cubbe (Minced Meatballs And Bulgur) With Garlic Sauce - Recipe

Required products :

  • 200 grams of bulgur
  • 500 milliliters of warm water
  • 1/2 pound of minced meat
  • 1 onion
  • 1-2 tablespoons oil
  • 1 teaspoon ground coriander and paprika, cumin and sumac
  • ground black pepper and salt to taste

For the garlic sauce:

  • 200 milliliters of yogurt
  • 5 cloves garlic
  • in connection with dill and parsley
  • black pepper, salt

For frying:

  • 500-700 milliliters of oil


Method of preparation :

Season the minced meat with the spices, mix it well.

Pour the bulgur into a tall bowl, fill it with warm water, close with a lid and leave for half an hour.

Then add to it 2/3 of the minced meat and mix until smooth. Put the combination in the refrigerator for 30 minutes.

Meanwhile, make the filling.

Finely chop the onion and fry it in 1-2 tablespoons of oil over medium heat until soft. Then add the remaining minced meat to it and fry for about 5-6 minutes (until the minced meat is ready).

Remove the mixture from the refrigerator, divide it into small pieces of about 40 grams each and shape them into balls.

Use your thumb to make indentations in the middle of them and put the stuffing there (1 tablespoon in each). Close it, giving the appearance of a lemon. Arrange the shaped on a floured board.

Then fry in a deep fryer and serve with garlic sauce, which you prepare by mixing yogurt with finely chopped garlic, parsley, dill and spices to taste.
