Required products :

2 large cucumbers, halved, peeled and sliced
1/2 head red onion, cut into thin strips
1/3 cup fresh parsley, finely chopped
1/2 cup salted peanuts
1 jalapeno pepper, cleaned of seeds and finely chopped
salt to taste

For the dressing :

1/4 tea cup lemon juice, freshly squeezed
2 tablespoons olive oil
1 clove of garlic, pressed

Method of preparation :

Put the onion in a small bowl of cold water and let it stand for 10 minutes. Drain and pat dry with kitchen paper.
Transfer to a large bowl and add the chopped cucumbers, parsley, peanuts and jalapeno peppers.
Mix the dressing ingredients in a small bowl and mix well.
Sprinkle the salad, stir and season with salt if necessary.
Submit and enjoy.
