Required products :

200 grams sweet potatoes
120 grams butter
2/3 teaspoon sugar
2 eggs
2 teaspoons honey
1/4 teaspoon fresh milk
250 grams flour
1 teaspoon baking powder
1/4 teaspoon walnuts

 

Method of preparation :

Grease the inside (both bottom and walls) of the muffin tins with butter (you can use paper ones). Turn on the oven to heat (at 180 degrees).

Pour the water into a saucepan and place on the stove. Once it boils, put the peeled and diced potatoes in it. Leave to cook for 5 minutes.

 

Then drain the water and leave the potato pieces for the moment.

 

In a large bowl, beat the butter with the sugar, separately - the eggs. Add 1/3 of the latter to the sweet butter mass. Stir thoroughly, then add another 1/3, stir. Followed by the remaining amount of eggs, honey and stirring thoroughly again.

 

Add the baking powder to the flour. Pour half into the egg combination and pour the milk.

 

Mix well and add the remaining flour.

 

Distribute the dough in the molds using a pastry syringe.

Spread the potato cubes and chopped walnuts on the surface of the future cupcakes.

 

Bake in the preheated oven for about 30 minutes.

 

Check readiness with a toothpick. Remove on a wire rack.
