Necessary products:

 

for cream

 

  • grated rind of one lemon
  • 1/2 cup crystal sugar
  • 6 tablespoons soft unsalted butter
  • 3 eggs
  • 1/2 teaspoon lemon juice

 

for the dough

 

  • 1 egg
  • 1/4 teaspoon vanilla
  • grated rind of half a lemon
  • 4 tablespoons butter
  • 3 tablespoons crystal sugar
  • 1 teaspoon and a half baking powder
  • 1 and 1/4 tea cups flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon milk
  • powdered sugar for decoration

 

Method of preparation:

 

Prepare the cream by putting the citrus peels and sugar in a blender. Beat until mixed, add the butter and beat again. Add the eggs, lemon juice and continue stirring.

Heat a saucepan, pour the mixture and wait for it to thicken, stirring constantly. Cool the cream, put it in a bowl and store in the refrigerator.

In another bowl, beat the egg, add the vanilla and lemon zest. Add the sugar and beat the mixture. You need to double your volume. Add the butter, milk and stir. In another bowl, mix the flour with the baking powder, cinnamon and salt.

Combine the two mixtures and mix until smooth. Heat a muffin tin, distribute the mixture in each compartment and press.

 

Bake for 5 minutes on one side, turn carefully and bake on the other for the same time.

 

Arrange the pancakes on a plate. Serve sprinkled with powdered sugar and garnished with lemon cream.
