Necessary products:
For chocolate:
Dark chocolate
300 ml low-fat cream
125 grams of dark chocolate
Orange peel
For the orange panna cotta:
300 ml low-fat cream
125 ml of fresh milk
2 tsp gelatin
2 tablespoons bitter orange jam
1/2 tsp sugar
Method of preparation:
The chocolate cream
Break the chocolate into pieces and put it in a bowl. Bring the cream to a boil and pour over the chocolate, add the grated orange peel and stir until the chocolate has melted. Put the mixture in the refrigerator for 2-3 hours.
On the orange panel elevation
Mix gelatin with 25 ml of fresh milk and put in a water bath to dissolve. Put the cream, sugar and the rest of the milk on a low heat, the mixture should boil. Remove from the heat and add the gelatin, then the jam. Stir the mixture well to distribute the gelatin evenly. If necessary, add sugar.
Cool to room temperature and cover with cold chocolate. Refrigerate for 4 hours or overnight.
