How To Cook De Parisien Cream Muffins And Powdered Sugar - Recipe

Necessary products

For the dough:

  • 380 grams of sifted flour
  • 5 grams of dry yeast (or 15 grams of live)
  • 75 grams of sugar
  • 1/3 teaspoon salt
  • 12 grams of milk powder (can dry cream for coffee)
  • 40 grams of melted butter
  • 1/2 teaspoon lemon peel
  • 1 small egg
  • 200 milliliters of water (or fresh milk)

 

For cream:

  • 350 milliliters of fresh milk
  • 2 egg yolks
  • 2 full tablespoons cornstarch (or flour)
  • 4 tablespoons sugar
  • 1/2 lemon peel cut into strips (optional)
  • vanilla
  • 40 grams of butter
  • 50 grams of almonds, roasted and ground
  • 1 tablespoon lemon juice

Method of preparation :

Start with the dough. Mix the dry ingredients: milk, flour, yeast, sugar, salt. Beat the egg with a fork and pour the water, add the dry mixture. Knead the dough. It will be sticky, but do not add more flour. Add the lemon zest and butter. Cover the dough with a towel and leave to rise for about 2 hours.

During this time, make the cream. Dissolve the starch in the milk, add the egg yolks, sugar, vanilla, lemon zest and bring the mixture to a boil over medium heat, stirring constantly. The finished cream will begin to bubble. Cool and then add the butter, beat lightly, pour the almonds, add the lemon juice and stir.

Sprinkle the worktop with flour and knead the risen dough on it, then divide it into 15 equal parts. Roll each of them, giving an oval shape with dimensions of about 12 - 15 cm. Pull one end by 3 cm and put the resulting cream. "Close" it with the dough and pinch well. Cut the rest of the dough into strips and roll into a roll.

 

Arrange the rolls in a tray, the bottom of which is lined with baking paper. Wait 30 minutes, spread with egg yolk and bake in a preheated oven to 180 degrees until golden (about 15 minutes). Cover the finished rolls with a towel and let them rest for 10-15 minutes. Sprinkle with powdered sugar and serve.

You can replace the flour in the cream with 2-3 tablespoons of cocoa powder if you want to get chocolate snacks.
