Necessary products:

 

  • 1 kg of pork fillet
  • 5 cloves garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • salt and pepper
  • 1 tablespoon vinegar
  • 2 tablespoons olive oil
  • 50 grams of butter
  • 1 tablespoon flour
  • 1 tablespoon corn flour

 

for the sauce

 

  • 200 grams of peeled cherries
  • juice of one lemon
  • 1/4 tea cup of water
  • 2 tablespoons sugar syrup
  • 1 tablespoon red wine

 

Method of preparation:

 

Cut the pork fillet into 1 cm thick pieces. Put the meat in a bowl and add the red pepper, salt, pepper, oregano, garlic, vinegar and olive oil. Stir, cover with cling film and refrigerate for 2-3 hours.

Meanwhile, prepare the fruit sauce. Put the cherries in a blender and grind until smooth. Heat a saucepan in which you put the sugar syrup, mashed mixture and lemon juice. Add water and wine. Cook over low heat, stirring the jam periodically.

After thickening, about 40 minutes, cool and set aside. Remove the fillet and mix the two types of flour in a plate. Heat the butter in a pan, roll the fillets in the mixture and fry until golden on both sides.

Arrange in a pan, pour the butter and bake for 10-15 minutes at 200 degrees. Serve the fillets warm, garnished with the resulting cherry sauce. Serve and enjoy the rich taste.
