Required products :

For swamps:

4 eggs
1.5 teaspoons sugar
1 teaspoon wheat flour
1/3 teaspoon potato flour
1 teaspoon baking soda

For the cream:

1 teaspoon liquid cream
250 grams of mascarpone
juice and peel of 1 orange
2 egg yolks
2 tablespoons cocoa
1/2 teaspoon brown sugar
2 tablespoons liqueur Cointreau
2 teaspoons strong espresso

 

Method of preparation :

Beat the eggs with the sugar until fluffy foam is obtained, to which add both types of flour and soda (sift them together beforehand). Stir quickly.

Cover the bottom of the pan with a sheet of parchment and pour the dough on it. Bake it in the oven for 6-8 minutes at 225 degrees.

Cut another sheet of baking paper the size and shape of the dish. Sprinkle with sugar and turn over the finished sponge cake, then remove the parchment that remains on top.

Make a cream.

Whip the cream with 1 tablespoon of sugar until stiff.

Mix the yolks with the remaining sugar until white and combine the two mixtures. Add the mascarpone to them and stir.

Using a cup, cut circles out of the dough.

Boil the coffee together with the grated orange peel and citrus juice. Pour the liqueur. Dip each sponge cake in the fragrant liquid and place at the bottom of suitable wide cups or dessert bowls.

Spread a layer of cream on them and continue in the same sequence: dough, tiramisu. Finish with cream.

Sprinkle the dessert with cocoa and serve.
