Required products :

  • 15 grams of dried mushrooms
  • 125 milliliters of dry white wine
  • 1 tablespoon olive oil
  • 1/2 teaspoon finely chopped onion
  • 2 cloves garlic, pressed
  • 250 grams of mushrooms
  • 1/2 teaspoon dried thyme
  • salt and freshly ground black pepper to taste
  • 750 milliliters of vegetable broth
  • 750 milliliters of water
  • 185 grams of pearl barley
  • 1 tablespoon tomato paste
  • 2 teaspoons fresh lemon juice

Method of preparation :

  • Thoroughly wash the mushrooms under cold running water and cut them into slices.
  • Heat the wine in a small saucepan until boiling and remove from the heat.
  • Add the dried mushrooms and let them stand in the wine for 15 minutes. Drain, keeping the wine in a glass.
  • Heat olive oil in a large saucepan over medium heat.
  • Add the onion and garlic and cook for about 3-5 minutes until soft.
  • Add the chopped fresh mushrooms, thyme, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for another 4-5 minutes until the mushrooms release their juice and turn slightly brown.
  • Add the wine, broth, water, barley, tomato paste and soaked mushrooms.
  • Cover the pan and simmer the soup for about 45-50 minutes until the barley is fully cooked.
  • Remove from heat and allow to cool slightly.
  • Mash 1 tea cup of the soup and return it to the pot.
  • Sprinkle with lemon juice, season with salt and pepper and serve.
