Pour the pitted green olives (without the liquid) into the bowl of a blender. Add the lemon zest and juice, add the dried oregano (you can replace it with basil), pour 5 tablespoons of olive oil and beat all the ingredients until pasty.
Serve the finished dip with fresh white bread.
