Required products :

  • 2 medium aubergines
  • 1 teaspoon salt
  • 1/4 tea cup tahini (sesame)
  • 3 tablespoons fresh lemon juice
  • 1 clove garlic
  • pinch of freshly ground black pepper
  • 1/4 tea cup olive oil + more for watering when serving
  • 1/2 teaspoon sumac (optional)

Method of preparation :

Peel an eggplant and cut it into large pieces.

Add salt and place in a pan covered with aluminum foil. Bake for 20 minutes at 200 degrees until soft, then remove the foil and bake for another 10 minutes.

Transfer the eggplant to a food processor, add the tahini, lemon juice, garlic and pepper. Grind the products until a homogeneous mixture is obtained.

Transfer to a bowl and pour over the olive oil. Sprinkle with sumac and serve with crackers, toasted high quality bread, vegetables or cheese.

Store in a tightly closed jar or under foil for up to 2 days in the refrigerator.
