How To Cook Donuts With Cauliflower Falafel And Beet Hummus - Recipe

If you want to prepare something tasty for the road, but you do not want to have meat, prepare a doner with cauliflower falafel. It is quick and easy to prepare, and the result is worth it.

Required products :

  • 500 grams of Arabic bread for doner
  • 700 grams of cauliflower, chopped
  • 2 eggs
  • 1/4 tea cup roasted almonds
  • 1/3 tea cup grated cheese (cheddar, gruyere, plain yellow cheese)
  • 1 large zucchini, cut into sticks
  • olive oil (or cooking spray)
  • 1/4 tea cup yogurt
  • 1 teaspoon of harissa paste
  • mix of leafy greens
  • 1 red onion, cut into crescents
  • 200 grams of beet hummus

Method of preparation :

Preheat oven to 180 degrees.

Cut a loaf and a half of Arabic bread into small pieces.

Grind the cauliflower with a food processor. Add eggs, almonds, yellow cheese, pieces of bread and season with salt and pepper. Grind with a few pulsations to obtain a homogeneous mixture.

Divide the mixture into 12 balls, which you shape by hand. Arrange them in a pan and add the zucchini.

Brush with olive oil or spray with cooking spray and bake for 25-30 minutes until golden.

Put the yoghurt and the harissa paste in a bowl and mix very lightly to get a marble effect.

Spread beet hummus on each loaf. Top with lettuce, onion, zucchini and 3 cauliflower falafels. Add the harissa sauce and yogurt. Wrap and serve.
