Required products :

  • 1 teaspoon cider (cider)
  • 3 1/2 teaspoons flour + more to sprinkle
  • 1 teaspoon crystal sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 2 large eggs
  • 4 tablespoons melted butter - chilled
  • 1/2 teaspoon vanilla extract
  • frying oil

for rolling:

  • 1 teaspoon sugar
  • 1 1/2 tablespoons cinnamon

Method of preparation :

Pour the apple cider into a saucepan and bring to a boil. Reduce heat to medium and wait for it to reduce to 1/4 cup - about 15 minutes. Allow the apple syrup to cool.

In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt. Mix them well.

In another bowl, beat the liquid ingredients - buttermilk and eggs, then add the vanilla.

Pour the liquid ingredients into the dry ones and mix well with a whisk or electric mixer.

Line a baking tray with parchment paper and sprinkle generously with flour. With floured hands, transfer the dough to the pan and flatten, the dough should be about 1 cm thick. Freeze for 15 minutes.

Meanwhile, heat the fat to 170 degrees.

Take the dough out of the freezer and transfer it to a floured kitchen counter. Cut into a donut shape (or use a cup and make a hole of the appropriate size). Sprinkle the cut edges of the donut with flour to keep its shape.

When you have formed the whole dough, start frying. Fry them in a lot of fat, put 2-3 donuts in the pan and fry for about 1 minute on the side until browned.

Remove the finished donuts on a napkin, wait a while, drain the fat and roll in a mixture of cinnamon and sugar.
