Necessary products

For the dough:

  • 600 grams of flour
  • 300 grams of sugar
  • 3 eggs
  • 1/2 cup fresh milk
  • 1/4 tea cup of water
  • 8 tablespoons butter
  • 2.5 teaspoons dry yeast
  • 1.5 teaspoons salt
  • oil

For the stuffing:

  • 300 grams of sugar
  • 110 grams of butter
  • 6 egg yolks
  • peel of 2 lemons
  • 1/2 teaspoon lemon juice

 

Method of preparation :

Mix the milk with the yeast and water. Leave the combination for a few minutes, then add salt, sugar, eggs and flour. Beat on low speed until you get a dough.

Cut the butter (pre-softened) into cubes and gradually put them in the dough. Beat until smooth and refrigerate overnight.

Roll it out the next day. The layer should be 1.5 centimeters thick. Cut large circles out of it and arrange them in a floured pan. Cover with plastic wrap and leave for 2.5-3 hours to rise.

When this happens, fry in on both sides (no more than 2-3 minutes) in very hot oil and remove on paper.

Mix 1/2 teaspoon of sugar with the grated rind of two lemons. Roll each of the donuts in this mixture and leave to cool.

Make a cream by beating the remaining sugar with the yolks and pouring the citrus juice. Beat until smooth.

Place the bowl with the mixture in a water bath until the cream thickens. (The color will turn light yellow).

Then remove from the heat and gradually add the butter, stirring. Refrigerate afterwards.

Pierce each of the donuts and fill with cream using a syringe.
