How To Cook Dough Casserole With Zucchini And Halloumi - Recipe

Required products :

  • 1 large red onion
  • 1/3 tea cup dill stalks
  • 1/3 tea cup mint leaves
  • 2 tablespoons olive oil
  • 2 cloves garlic, mashed
  • 1 lemon - the peel is finely grated, and the fruit is cut into 4 pieces
  • 500 grams of zucchini, coarsely grated and drained of liquid
  • 225 grams of halloumi cheese, grated
  • 6 eggs
  • 125 grams of spelled flour
  • 1 teaspoon baking powder
  • 1 tablespoon pine nuts
  • 1 teaspoon sumac
  • 1 teaspoon sesame seeds
  • 3/4 teaspoon dried mint
  • yogurt for serving

Method of preparation :

Preheat oven to 190 degrees.

Grease and line a rectangular tray with baking paper.

Cut 1/3 of the onion into thin rings, save them for later.

Finely chop the remaining onion.

Save some of the fresh dill and mint to serve, and chop the rest very finely.

Heat 1 tablespoon olive oil in a pan and fry the onion, garlic and lemon zest for about 3 minutes until soft. Transfer to a bowl, add the zucchini, chopped mint and dill and halloumi cheese.

Beat the eggs with the remaining olive oil, add the sifted flour and baking powder. Mix well and add salt. Transfer to the zucchini and combine. Pour into the prepared pan, and on top arrange the mint and dill, as well as the preserved onion rings.

Combine the nuts with the sumac, sesame seeds, dried mint and sprinkle the pastry with the mixture.

Bake for 40-43 minutes. Allow the casserole to cool in the form for 10 minutes before serving.

Serve with yogurt.
