Necessary products:

  • 700 grams of beef ribs
  • 1 medium carrot
  • 1 large onion
  • 1 sprig of rosemary
  • frying oil
  • pinch of dill (seeds)
  • 1 g (literally) lemon peel
  • 0.400 l of dark beer
  • 200 ml meat broth
  • 1 slice (10 grams) lemon
  • 2 bay leaves
  • salt and pepper - to taste
  • 1 tsp sugar
  • 1-2 cloves garlic
  • 1 tsp fresh parsley

Method of preparation:

Wash the ribs with cold water, season with salt and ground black pepper. Fry in very hot fat until golden brown. Then transfer them to a pan with a lid. In the oil in which you fried them, fry sliced ​​carrots and onions. When a crispy crust forms on the carrots, the vegetables are ready. Add them to the ribs, add some dry dill seeds, a sprig of rosemary, two bay leaves, a teaspoon of sugar, crushed garlic, a glass of meat broth and of course beer. Beer can be any, but it is good to use one with a rich, dense taste and aroma.

Put the dish on the stove and let it cook for about 1-1.5 hours, until the meat softens. 10-15 minutes before removing from the heat, add the lemon peel (finely chopped) and a slice of lemon, remove the rosemary and bay leaves.

Arrange the ribs on a plate and add the resulting beer sauce, vegetables and garnish with parsley and freshly ground black pepper.

If you do not want to experiment with beer, you can use dry red wine.
