Wash and dry the duck, cut off the edges of the wings, because they usually burn and will give an unpleasant smell of burnt to the whole dish.
Pour your favorite chicken spices into a large bowl.
Add the wine and apple juice, add salt and pepper to taste.
Cut the apples and quinces into small pieces.
Rub the duck with ground black pepper inside and fill with the fruit. No need to sew.
Put the bird in a sleeve and pour the marinade.
Release the air from the bag, tie and store in the refrigerator for 6-8 hours. 4 hours after placing in the package, turn the duck so that the meat can be marinated on the other side.
Before baking, drain the sauce, leaving about half a cup for juiciness.
Coat the duck with honey, tie again in the sleeve.
Place in the oven for 1 hour at 180 degrees. Then reduce the temperature to 150 - 160, let the dish cook for another 30 minutes, reduce to 100 degrees and after half an hour the duck should be ready.
If it is necessary to bake more, do it at 100.
