How To Cook Duner With Eggplant, Tzatziki Sauce And Fresh Vegetables - Recipe

Required products :

  • 700 grams of eggplant
  • 1 teaspoon salt
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons fresh dill - chopped
  • 2 tablespoons lemon juice
  • 2 large cloves of garlic - grated
  • 1 teaspoon dried coriander, cumin, oregano, hot red pepper

For the tzatziki sauce:

  • 1 teaspoon grated cucumber
  • 1/2 cup yogurt
  • 1 tablespoon fresh dill - chopped
  • 1 clove garlic - grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

for serving:

  • 4 wholemeal donut cakes
  • 1 large tomato - sliced
  • 2 tea cups chopped lettuce
  • 1/4 cup red onion - crescents

Method of preparation :

Cut the eggplant into strips 1 cm wide. Put them in a colander and salt them. Leave them for 30 minutes to drain the bitter juice. Then rinse and dry. Transfer the eggplant to a pan.

Mix olive oil, dill, lemon juice, garlic, coriander, cumin, oregano and paprika. Spread the resulting marinade on the aubergines and store them in the refrigerator for 3 hours or overnight.

Prepare tzatziki sauce: put the cucumbers in a clean household towel and squeeze them to separate as much of the water contained in them as possible. Put the cucumber in a bowl, add the milk, dill, garlic, salt and pepper. Stir and refrigerate.

Heat a grill over medium heat and bake the eggplant until golden - about 3-5 minutes per side.

Put a piece of eggplant in a loaf of bread, add tomatoes and lettuce and garnish with tzatziki sauce and purple onion. Wrap the bread and eat immediately.
