How To Cook Easter Buns With Cream And Coconut Shavings - Recipe

Necessary products

For the dough:

75 grams of butter
1 egg
250 milliliters of milk
500 grams of flour
3 tablespoons sugar
1/2 teaspoon salt
7 grams of dry yeast

For cream:

1/2 teaspoon vanilla extract
250 milliliters of fresh milk
2 egg yolks
1 tablespoon flour
1 tablespoon starch

50 grams of sugar

For the glaze:

juice of 1 medium lemon
100 grams of powdered sugar

coconut shavings for sprinkling


Method of preparation :

Start by making a cream. To do this, mix the flour and starch in a small bowl, add the sugar, the two yolks and with the help of a wire whisk beat until smooth.
Pour 1/3 of the hot milk to which you have added the vanilla extract to the mixture of flour, starch and eggs. Stir vigorously with a wire for this purpose. Then pour the remaining milk, stirring constantly. Put the dish on low heat and do not stop stirring with a wooden spoon until the cream thickens. When this happens, transfer it to another container and cover with plastic wrap to "lie" right on top of it so that no crust forms on the surface. Refrigerate to cool.

Knead the dough.

Heat the milk and dissolve the yeast and sugar in it, add 4 tablespoons of flour. Leave the mixture in a warm place for 10 minutes to ferment.

Meanwhile, sift the flour into a bowl, melt the butter and beat the egg with a pinch of salt.

When the yeast mixture ferments, add the egg and knead the dough, gradually adding the flour (use 450 grams of it) and butter. The dough should be smooth, elastic and soft. Shape it into a ball.

Pour cold water into a bowl and put the dough in it. It will sink to the bottom, and after 10-15 minutes it will rise. The time for this depends on the duration of kneading.

Then remove from the water, dry and knead once more, adding the remaining flour. Cover the dough with a towel and refrigerate for 30 minutes.

When the specified time has elapsed, divide the dough into loaves (about 60 grams each). Give them the shape of balls, in the middle of which make indentations with your fingers. Leave for 20 minutes to rise.

Spread the cream in the prepared places, smear the surface with egg and bake the cakes in a preheated oven to 180 degrees for about 20 minutes.

Make a glaze by beating the powdered sugar with the lemon juice. Spread the finished cakes with it. Sprinkle with coconut shavings and serve.
