Necessary products

For the dough:

6 eggs

500 milliliters of fresh milk

11 grams of dry yeast

1 - 1.4 kg of flour

250 grams of butter

250 - 300 grams of raisins

250 grams of sugar

1.5 tablespoons oil

vanilla sugar to taste

a little salt

oil to lubricate the dish

 

For the glaze:

2 proteins

1 teaspoon powdered sugar

vanilla sugar to taste

lemon juice to taste

 

Method of preparation :

Warm the milk slightly and add the yeast to it. Mix well, add 1.5 tablespoons of sugar, 1/2 teaspoon of salt, 1.5 tablespoons of oil and 300 grams of sifted flour.

Stir until smooth and leave in a warm place for 40 minutes to increase its volume.

Melt the butter in a water bath and allow to cool. Divide the eggs into yolks and whites.

Beat the yolks with the remaining sugar, add the vanilla. Beat the egg whites with a mixer until you get a stable foam.

Add the prepared egg yolks and melted butter to the yeast mixture, which has already increased in volume. Mix thoroughly and put the egg whites to a froth.

Stir once more and gradually add the sifted flour. Judge the exact amount at the time of kneading, you need to make a not very hard dough, which you leave to rise for an hour in a warm place.

During this time, pour hot water over the raisins and let them stand for about 30 minutes to swell. Then dry and add to the dough.

Knead and wait again, as long as it takes to increase its volume 2-3 times.

When this happens, "crumple" with your fingers and spread on greased parchment, covering the bottom and walls of a suitable shape. The dough should occupy 1/3 of the height of the dish.

Let it double in volume again and place in a preheated oven. Bake at a temperature of 180 degrees until ready, which you check with a toothpick.

 

Make the glaze.

Beat the egg whites with the powdered sugar until a thick mass is obtained. Add a few drops of lemon juice and a pinch of vanilla sugar (or to taste).

Whisk the mixture once more for 5 minutes to form a stable foam.

Wait for the finished cake to cool and cover with the icing. Decorate as desired and serve.
