Required products :

  • 90 grams of butter
  • 200 grams of powdered sugar (150 of them for the dough, and the rest - for the cream)
  • 2 medium eggs
  • 150 grams of flour
  • 3/4 teaspoon baking powder
  • pinch of salt
  • 95 milliliters of fresh milk
  • 400 grams of mascarpone
  • 1 vanilla or a few drops of vanilla essence
  • food coloring of your choice and optional
  • candies for decoration (in the form of mini eggs, for example, can glazed nuts, candied blueberries and others)


Method of preparation :

In order to obtain delicate cupcakes, it is important that the temperature of all products is the same and roomy. Leave the eggs, butter, powdered sugar and flour at room temperature for about 4-6 hours before making the dough.

Beat the butter and powdered sugar with a mixer on medium speed until white and get a light cream (this will take between 8 and 10 minutes). Then, without stopping the beating, add the scrambled eggs, gradually adding a spoonful of them. It takes about 4-5 minutes to have a fluffy homogeneous cream-emulsion.

 

Add the flour sifted with the leavening agent and a pinch of salt three times, pour in the milk, add a little vanilla or a few drops of vanilla essence. Mix the dough with the mixer turned on at the lowest speed.

 

The amount obtained is enough to prepare 12 standard cupcakes. Distribute it in the appropriate containers, which fill half or a maximum of 3/4 of their volume.

 

Bake until done (about 20 minutes at 200 degrees), which you check with a toothpick (pierce the dough with the last one and you have to take it out dry if the cupcakes are baked enough).

Allow to cool and make mascarpone cream.

 

Beat the cold mascarpone with the powdered sugar and a pinch of vanilla. Be careful, the mixer must run at low speed. Add a colorant of your choice. In this case, it is based on the green color, which associates the grass on which the candy eggs will be arranged later.

You can color with natural dyes: spinach or parsley juice, matcha tea .

 

Fill a syringe with green cream and decorate the cupcakes using different tips.

 

 

Arrange the selected elements for decoration in the unique "green areas" and serve.
