If you like eggplant with tomato sauce, you will surely like the next dish. Eggplant "lasagna" lasagna is very fast and tasty and with very rich and pleasant flavors. There's no way you can't like the combination of cheese, tomato sauce and eggplant.

Required products :

  • 3 eggplants
  • left
  • 1 tablespoon olive oil
  • 3 cloves garlic - crushed
  • 1 onion
  • 2 tablespoons oregano
  • black pepper to taste
  • 800 grams of marinara sauce
  • 400 g of ricotta
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/4 teaspoon parsley
  • 4 tea cups grated ripe mozzarella

Method of preparation :

Cut the aubergines thinly lengthwise. Add salt and leave for 20 minutes, then dry them with kitchen paper.

Heat a large skillet over medium heat and pour in the olive oil. Put the crushed garlic cloves and stir, add finely chopped onion and oregano. Season with salt and pepper, cook until onion becomes translucent. Add the marinara sauce and cook until it starts to simmer.

In a bowl, mix the ricotta, parmesan, egg and parsley. Season again with salt and pepper.

In a ceramic rectangular pan, put some of the marinara sauce and spread it on the bottom. Arrange a layer of eggplant, put a layer of ricotta on top, sprinkle with mozzarella, then marinara sauce and repeat in the same order. Finish with eggplant and marinara sauce. Sprinkle with mozzarella and parmesan.

Cover with foil and bake for 35 minutes at 200 degrees. Before serving, sprinkle with parsley leaves.
