Required products :

  • 2 1/2 teaspoons flour
  • 1/2 teaspoon sugar
  • 3/4 teaspoon salt
  • 3/4 teaspoon olive oil
  • for lemon cream:
  • 6 eggs
  • 1 3/4 tea cup sugar
  • 7 tablespoons flour
  • 1 teaspoon lemon juice
  • peel of 3 oranges, grated
  • 1/2 teaspoon salt

Method of preparation :

Turn on the oven to preheat to 160 degrees.

Spread a square 16 cm tray with baking paper - both on the bottom and on the walls. To get the right shape, without creases, cut a larger sheet of paper, which you fold tightly along the walls of the tray.

Put the flour, sugar and salt in a bowl. Stir with a spoon and add olive oil, stir to form moist crumbs - there should be no dry areas, but do not expect the dough to stick.

Pour into the pan and press well on the bottom. Punch with a fork and bake for 45 minutes until golden brown.

Meanwhile, prepare the cream: combine all the ingredients in a bowl and mix with a whisk until smooth.

Remove the marshmallows and quickly pour the mixture on top, return to the oven and continue baking for another 30-35 minutes.

Cool to room temperature, then refrigerate. Use the paper to remove the dessert from the pan. Cut into 16 squares and serve.
