Necessary products

For the dough:

120 grams butter
baking soda on the tip of a knife
200 grams flour
5 eggs
100 milliliters of liquid cream with a fat content of 20%
1/2 teaspoon salt


For cream:

250 grams butter
1 tea cup sugar
1 egg
150 milliliters liquid cream
pinch vanilla sugar

Method of preparation :

Pour the water into a deep saucepan. Bring to a boil and then add the butter. After boiling again, pour the flour into it, stirring thoroughly. Add the cream. You will get a thick dough that easily separates from the walls of the bowl. If this does not happen, use a little more flour.

Beat the eggs with the baking soda and salt and start adding them gradually to the dough, stirring constantly.

Pour the dough into a pastry syringe or plastic bag. Cover the bottom of the tray with parchment and form eclairs on it. Bake them in a preheated 200 degree oven for about 30 minutes.

The eclairs must inflate. Do not remove them immediately from the oven after switching it off (wait 10-15 minutes).

Start making the cream. Mix the cream and sugar, heat the mixture over low heat, stirring constantly, until the sweet crystals melt.
When this happens, pour the previously beaten egg in a thin stream. Let the resulting syrup cool and add the softened butter in portions, stirring vigorously.

Beat the cream with a mixer until fluffy, and add a pinch of vanilla sugar.

Fill the cooled eclairs with the oil sweetness using a syringe, or just cut in half.

If desired, serve sprinkled with powdered sugar.
