How To Cook Eclairs With Ice Cream And Chocolate Sauce - Recipe

Necessary products

For the steamed dough:

  • 100 grams of butter
  • 250 milliliters of water (1 cup)
  • 160 grams of flour (1 cup of tea)
  • 5 medium-sized eggs
  • pinch of salt

For the chocolate sauce:

  • 100 grams of dark chocolate
  • 1 tea cup liquid cream with a fat content of not less than 33%
  • 3/4 tea cup sugar or amount to taste
  • 40 grams of butter
  • 2 teaspoons vanilla extract or vanilla sugar to taste
  • 2 tablespoons corn syrup if desired

For the stuffing:

  • 300-400 grams (or amount of your choice) of vanilla ice cream


Method of preparation :

  • First make the steamed dough.

Bring the water to a boil over medium heat and add a pinch of salt. Then gradually pour the flour into it, stirring constantly so that no lumps form. Remove the pan from the heat and allow the dough to cool slightly.

  • Turn on the oven to preheat to 180-190 degrees.

Using a pastry syringe or a teaspoon, form eclairs from the dough, which you place directly in a greased and floured pan (or cover the bottom with greased parchment paper). There should be a distance of about 4-5 centimeters between them.

Bake them until golden (about 30-40 minutes), without having to open the oven during the process.

  • While the eclairs are baking, make the chocolate sauce.

Break the chocolate into pieces, put in a blender and grind until fine crumbs. You can also use a food processor.

In a suitable bowl, mix the cream with the sugar and corn syrup, if it will be present in your recipe (it is not a mandatory ingredient, its role is to prevent the crystallization of the sugar and the sauce to have a smoother structure). The mixture should boil over low heat, then remove the pan from the heat.

Pour the liquid over the chocolate crumbs, add the vanilla extract (or vanilla sugar) and the diced butter. Beat until smooth.

Cut the baked eclairs in half, fill with ice cream and pour the sauce.
