Method of preparation :
Bring the water to a boil over medium heat and add a pinch of salt. Then gradually pour the flour into it, stirring constantly so that no lumps form. Remove the pan from the heat and allow the dough to cool slightly.
Using a pastry syringe or a teaspoon, form eclairs from the dough, which you place directly in a greased and floured pan (or cover the bottom with greased parchment paper). There should be a distance of about 4-5 centimeters between them.
Bake them until golden (about 30-40 minutes), without having to open the oven during the process.
Break the chocolate into pieces, put in a blender and grind until fine crumbs. You can also use a food processor.
In a suitable bowl, mix the cream with the sugar and corn syrup, if it will be present in your recipe (it is not a mandatory ingredient, its role is to prevent the crystallization of the sugar and the sauce to have a smoother structure). The mixture should boil over low heat, then remove the pan from the heat.
Pour the liquid over the chocolate crumbs, add the vanilla extract (or vanilla sugar) and the diced butter. Beat until smooth.
Cut the baked eclairs in half, fill with ice cream and pour the sauce.
