Required products :

  • 3/4 tea cup flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 10 eggs
  • 1 3/4 cup buttermilk
  • 2 tablespoons melted butter + more for the eggs
  • 16 slices of pre-cooked bacon
  • 2 teaspoons baby spinach
  • maple syrup for serving

Method of preparation is:

In a bowl, mix the flour, baking soda, baking powder and salt.

Using an electric mixer, beat 2 egg whites (keep the yolks) until they become a cream with soft tips - for about 2-3 minutes. Set aside.

In a large bowl, mix the egg yolks, butter and buttermilk. Add the flour and stir until combined. Carefully add the egg whites in portions and stir to mix all the ingredients.

Prepare the waffles in an appliance. Transfer the waffles to a baking tray lined with parchment paper and store in an oven preheated to 100 degrees to keep warm.

Fry the remaining 8 eggs in butter. Cut the waffles diagonally and make a sandwich with the egg, bacon and spinach. Drizzle with maple syrup when serving, if desired.
