Required products :

1.5 liters of meat broth

40 grams of animal fat of your choice

60 milliliters of olive oil

5 grams of nutmeg

2 grams of ground black pepper

120 grams of garlic

4 eggs

200 grams of bread

 

Method of preparation :

Fry the garlic in 2 tablespoons of animal fat on low heat, not allowing the cloves to turn red, they should soften. Pour the heated broth (or water), add the nutmeg, pepper and salt to taste.

Bring to the boil and let it cook for 15 minutes, then strain.

Pass the garlic through a sieve and add to the broth.

Beat the yolks with olive oil and add 1 ladle of hot broth, pouring a thin stream of it and stir constantly. Mix the resulting egg liquid with the broth, stir and heat, but do not let the soup boil.

Pre-bake several thin slices of white bread and put the fried egg whites on each. Divide the slices into bowls and pour over the garlic soup.
