Required products :
8 boiled eggs
120 grams of ham
200 milliliters of thick milk sauce
1 raw egg
3 tablespoons breadcrumbs
200 grams of tomato puree
2 teaspoons vegetable oil
15 grams of parsley
1 egg, beaten with a little milk or water (1/4 tea cup)
lettuce leaves
salt to taste
Method of preparation :
Boil the eggs, separate the egg whites and chop finely. Season with salt, mix with the hot milk sauce to which you have added the raw egg yolk, leave to cool.
Cut the boiled yolks and add the ham, also finely chopped. Pour a little milk sauce mixed with the raw protein.
From the cooked egg whites form balls, cover them with a layer of yolks and form croquettes the size of a large walnut. Dip in beaten egg with milk, roll in breadcrumbs and fry in hot oil.
Serve the egg pieces on lettuce leaves, sprinkled with chopped parsley. Serve the tomato puree separately.
