These impressive egg zucchini nests are surprisingly easy to prepare. No frying or spreading is required, but they are baked on the vegetable nest. Serve as a healthy breakfast or lunch, and why not as dinner.

Required products :

  • 2 medium ticks, grated through a spiral
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon black pepper, salt and garlic powder
  • 1/2 cup ricotta cheese
  • 1/4 tea cup fresh basil, chopped
  • 2 tablespoons parmesan, grated
  • 4 medium-sized eggs

Method of preparation :

Preheat oven to 200 degrees. Put a sheet of baking paper in a pan and grease it with olive oil.

Season the spiral zucchini with salt, pepper and garlic powder. Form 4 nests of the resulting mixture in the pan. Bake for 5 minutes.

Meanwhile, mix the ricotta cheese, basil, parmesan and black pepper in a small bowl. Distribute 2 tablespoons of the mixture in the center of each nest, making a small well in which to knock 1 egg. Bake for 12 to 15 minutes or until done and serve.
