Method of preparation :
Chop (not too finely) onions, peppers and carrots. Cut the mushrooms into several large pieces.
Fry the vegetables until soft in olive oil (the temperature should not be too high). Pour the tomato sauce and let everything simmer for 5-10 minutes. Season to taste (you can use basil and parsley).
A thick sauce is obtained, half of which is poured into a casserole. Make a "hole" in the middle of the liquid, in which you knock one egg, trying to keep the yolk intact.
Sprinkle with grated mozzarella and add half a teaspoon of mayonnaise.
Prepare another casserole in the same way.
Place the dishes in the oven and after 10-15 minutes the dish will be ready.
