Melt the butter in a deep bowl.
Add the flour and stir for 1-2 minutes, then pour the milk in a thin stream.
Let the sauce cook for about 2-3 minutes, stirring constantly.
Transfer to a bowl and allow to cool.
Separate the yolks from the whites. Add the yolks to the sauce.
Grate the zucchini with a coarse grater. Pour it into the sauce, add the chopped parsley (or dill), add 2 tablespoons of grated cheese. Mix everything.
Beat the egg whites with a pinch of salt and pour them into the resulting combination. Stir again.
Cover the bottom of the pan with baking paper, grease with olive oil, and pour the mixture into the base of the roll.
Distribute it evenly in the pan and bake in a preheated oven for 15 - 20 minutes.
Then take the finished dough out of the pan, let it cool for about 10-15 minutes, roll it up when this happens.
Wash the mushrooms and cut them into pieces, fry in olive oil until done.
Mix them with the cooked rice, the chopped green spices, the remaining yellow cheese, and the cottage cheese. Season with salt and pepper, stir.
Unroll the roll carefully, return it to the tray and distribute the filling evenly over its surface.
Form a roll, cut it into thick pieces and you can serve with lettuce or fresh vegetables.
