How To Cook Eggplant Accordions With Tomatoes And Cream Sauce With Cheese And Garlic - Recipe

Required products :

  • aubergines (large and equal in size)
  • tomatoes
  • carrots
  • sour cream
  • cheese
  • olive oil
  • salt to taste


Method of preparation :

Wash the vegetables, clean them of excess. Cut the aubergines into equal circles, but do not cut completely (see next photo).
Add salt and leave for 10-15 minutes, then rinse. Fill them with cold water and leave for another 20 minutes.


Carrots and tomatoes also cut into circles (tomatoes should be slightly thicker than carrots).

 

Remove the eggplant harmonicas from the water, dry them and smear the incisions with a little olive oil so that they do not get too dry. Then fill them with tomatoes and carrots, alternating the two vegetables.

 

Put sour cream in a deep bowl and add crushed garlic cloves and grated cheese to taste. Stir until smooth.

 

Fill the gaps between the vegetables with the resulting sauce and spread on the surface of the aubergines.

 

Arrange them in a tray, the bottom of which you have covered with parchment greased with oil. You can run toothpicks in the middle of the aubergines for more stability.

 

Bake the dish in a preheated 180 degree oven for about 50 minutes. 10 minutes before it is ready, turn on the grill mode.

Serve with a salad of fresh vegetables.
