Required products :

  • 3 large aubergines, cut in half
  • olive oil
  • 2 cloves garlic, peeled
  • 2 teaspoons coriander
  • 2 teaspoons cumin seeds
  • 400 grams of canned chickpeas, drained
  • 2 tablespoons chickpea flour
  • peel and juice of 1/2 lemon + 1/2 lemon cut into slices (for serving)
  • 3 tablespoons breadcrumbs
  • milk sauce

Method of preparation :

Preheat oven to 200 degrees.

Make cross-sections of each of the eggplant halves and spread with olive oil. Arrange them in a pan with garlic, season with coriander and cumin seeds. Season to taste and bake for 40 minutes or until the eggplant is soft.

Cool, carve the inside, mix with garlic and spices. Add chickpeas, flour, lemon zest and juice and mash. Form 20 balls of the mixture and place them in a tray lined with baking paper. Refrigerate for at least 30 minutes.

Preheat oven to 180 degrees. Roll the meatballs in the breadcrumbs, arrange in the pan and pour with olive oil. Bake for 20 minutes or until golden and crispy. Serve with milk sauce and lemon slices if desired.
