Learn how to cook "Eggplant casserole with blackcurrant sauce". Delicious recipe.
Required products :
2 aubergines
30-40 grams of flour (half for the sauce, the rest - for rolling the aubergines)
1 onion
1 small carrot
celery root
100 milliliters of meat broth
30 grams of blackcurrant jam
salt and green spices to taste
oil
Method of preparation :
Wash the aubergines, cut them into cubes and sprinkle with salt. Let stand for 20-25 minutes, then rinse them with water, roll in half flour and fry.
Peel the celery, onion and carrot, chop and also fry (separately from the aubergines). Pour the broth over them and add 15-20 grams of flour. Stir constantly until the vegetables are soft. Then pass the mixture through a sieve to separate the coarse parts. Return the resulting mixture to the pan and add the blackcurrant jam, spices.
Distribute the fried eggplant in pots and put the fruit and vegetable sauce on it.
Bake the dish in the oven for about 15 minutes.
