Required products :
4 medium aubergines
5 - 6 cloves of garlic
1 tablespoon finely chopped mint
3 tablespoons olive oil
juice of half a lemon
2 tablespoons chopped parsley
salt and pepper to taste
50 grams of walnuts
Method of preparation :
Wash the aubergines, peel the garlic cloves and cut them into slices. Pierce the aubergines with a thin knife in several places and put the pieces of garlic there. Wrap in foil and bake in the oven until done. Then wait for it to cool and peel. Finely chop, add lemon juice, olive oil, parsley, mint, salt to taste and stir. Sprinkle with crushed walnuts.
If you prefer, roast the aubergines without adding garlic - you can add it later with the other spices.
Another option for making dip is to grind (to obtain a puree) roasted aubergines along with all the spices, including walnuts.
