Necessary products:

  • 500 grams of eggplant
  • 1 sweet pepper
  • 1 hot pepper
  • 2 tsp dried coriander
  • 4 cloves garlic
  • 50 ml of water
  • 50 ml of lemon juice
  • 5 tablespoons refined sunflower oil
  • 4 tablespoons honey
  • 10 grams of salt
  • 10 grams of fresh parsley

Method of preparation:

Cut the eggplant into pieces, add plenty of salt and leave for 1 hour. Fry the chopped garlic, remove it from the fat and leave it in a separate bowl. In the same oil pour the lemon juice, water and honey. Bring to a boil, reduce the heat and leave on for about 7 minutes.

Cut the peppers and add them to the honey mixture. Then the garlic and coriander, stir. Remove from the heat 1 minute after everything boils.

Drain the eggplant pieces, wash them under running water and dry with a paper towel. Fry them on both sides until semi-finished, add salt. Arrange in the pan with the caramel mixture, stir, sprinkle with parsley and leave on the fire for another 5 minutes. Then remove the aubergines to a plate, pour the remaining mixture over them, sprinkle with chopped parsley. Refrigerate. Serve chilled.
