Wash the aubergines and cut them into straws without peeling. Sprinkle with 1-2 tablespoons of salt, stir and leave for 8 hours.
Then drain the liquid and fry the strips in oil.
Turn the peppers and carrots into straws, cut the onion into thin semicircles, mash the garlic and finely chop the green spices.
Pour all the vegetables and spices in the aubergines, season with vinegar and leave the salad for 12 hours in the cold (the longer it stays, the tastier it will be).
