Required products :

  • 3-4 eggplants
  • 1 carrot
  • 1 sweet pepper
  • a piece of ginger
  • 2 cloves garlic
  • 2 tablespoons vinegar
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • pinch of salt
  • 1/2 teaspoon water
  • oil to taste
  • 1.5 tablespoons starch

 

Method of preparation :

Cut the aubergines (without peeling them) into pieces, add salt and leave for a while.

 

Carrots cut into thin straws.

 

Cut the sweet pepper in the same way.

 

Fry the carrots briefly in very hot oil, transfer them to a saucepan and put the peppers in the pan. Once they are fried, pour over the carrots. The vegetables should only turn slightly red and remain firm.

 

Roll the eggplant pieces in starch and then add the strips of peppers and carrots to the pan.

 

In a small bowl, mix 1 tablespoon of grated ginger with grated garlic cloves, pour vinegar (you can use apple cider vinegar) and soy sauce, sweeten with honey.

 

Pour this sauce over the vegetables and add half a glass of water.

 

Place on the stove and let the products cook for 2-3 minutes. Wait a while before serving the salad so that all the flavors and aromas can be absorbed.
