Necessary products:

800 grams of eggplant

800 grams of tomatoes

5 tablespoons vegetable oil

2 tablespoons sugar

1 head of garlic

Method of preparation:

Cut the aubergines into semicircles, grate the tomatoes on a large grater, peel the garlic and cut into thin slices.

Pour the tomatoes into a saucepan, add the garlic, sugar, oil, salt and bring to a boil. Then add the aubergines, stir.

Let simmer for about 30-40 minutes until the aubergines are completely soft, stirring twice during this time. Once the mixture has cooled, refrigerate overnight or longer.

It is tastier if served cold.
