How To Cook Eggplant In Tomato Sauce With Cheese And Herbs - Recipe

Required products :

  • 1 medium eggplant
  • 1 teaspoon breadcrumbs
  • 1 1/2 teaspoons grated Parmesan cheese
  • 1 egg
  • 1 tablespoon fresh milk
  • 3 teaspoons tomato sauce
  • 1 1/2 teaspoons Italian spice
  • 1/2 teaspoon kosher salt
  • 2 teaspoons grated cheese
  • 1 teaspoon fresh basil
  • 1 teaspoon fresh oregano
  • 1/2 teaspoon fresh thyme

Method of preparation :

 

  • Preheat the oven to 180 degrees and grease a rectangular baking dish with approximate dimensions of 23/33 centimeters.
  • Peel an eggplant and cut it into round slices 1.5 cm thick.
  • In a deep bowl, mix the breadcrumbs with 1/2 teaspoon of parmesan. Stir well.
  • In a bowl, beat the egg with the milk.
  • Dip each slice in the egg mixture and roll on both sides in breadcrumbs.
  • Arrange the eggplant in one layer on the bottom of the dish.
  • Bake for 20 minutes, turn and bake for another 15-20 minutes. Remove to a plate and set aside.
  • In a large bowl, mix the tomato sauce with the Italian spice and salt. Stir well.
  • Spread 1/2 tea cup on the bottom of the pan and arrange half of the roasted eggplant on top.
  • Cover with 1 tea cup of the flavored tomato sauce and spread 1 tea cup of the shredded cheese on it.
  • Sprinkle with 1/2 cup grated Parmesan cheese. Repeat with the other products, following the order.
  • Bake for 30 minutes until the cheeses are melted.
  • Sprinkle with fresh herbs and serve.
