Required products :
2 eggplants
1 raw egg
150 grams grated yellow cheese
2/3 tea cup flour
8-10 sprigs of parsley
salt and ground black pepper to taste
breadcrumbs
frying oil
Method of preparation :
Wash the aubergines, pierce them in several places with a fork and bake them in the oven at 180 degrees for 30-40 minutes. When cool, peel them and chop the inside. Chop the parsley.
In a suitable bowl, mix all the products and store the resulting "minced meat" in the refrigerator for 1-2 hours. Then form meatballs from it, roll them in breadcrumbs and fry in hot oil on both sides until golden brown.
