Required products :

1 kg of eggplant
400 grams of onion
100 milliliters of oil
50 grams of tomato paste
2 large cloves of garlic
1 teaspoon of salt (topped)
1 teaspoon of sugar
1 teaspoon of apple cider vinegar
ground black pepper to taste

Method of preparation :


Roast the aubergines, peel them and chop finely. Cut the onion as well and fry it in a pan with hot oil until soft (about 12-15 minutes). Then add the tomato puree, let it simmer together for about 5-8 minutes and then put the eggplants. Stir and let the vegetables simmer under a lid on low heat for 5 minutes.
Season with salt and ground black pepper, add finely chopped garlic, vinegar, sugar and close the jar with a lid. Cook for 5 minutes, remembering to stir.
Taste and season further if necessary.

Distribute the finished puree in sterilized jars and close while hot. Turn the jars upside down, wrap in a blanket and leave to cool completely.

About 1 kg of ready appetizer is obtained. Store in a cool place.
