How To Cook Eggplant Rice With Soy Sauce, Garlic And Oregano - Recipe

Required products :

  • 1 cup rice
  • 2 medium aubergines
  • 1 head of old onion
  • 1 medium carrot
  • 2 cloves garlic
  • 2-3 tablespoons vegetable oil
  • 2 tablespoons classic soy sauce
  • 50 milliliters of water
  • black pepper, oregano, salt and allspice to taste

 

Method of preparation :

Rinse the rice several times and boil it until semi-finished in a large amount of salted water, then drain the liquid with a colander.

Peel onions, carrots and eggplants. Cut onions into semicircles, carrots and aubergines into straws, and garlic into thin slices.

Flood the aubergines with salt water for half an hour, then drain it, add salt and dry the strips of vegetables. Fry the eggplant in a small amount of hot oil. Remove to a plate and fry onions, garlic and carrots in the same pan.

When ready, mix them with rice and eggplant. Pour a little water to which you have previously added soy sauce and spices.

Close the pan with a lid and let the dish cook over low heat until the rice is fully cooked.

Apart from being a side dish or main dish, the mixture can also be used as a filling for peppers or sarma.
