Method of preparation:
Wash and dry the aubergines. Cut them into slices, add salt and roll them in flour. Heat the fat and fry them. Drain and cool.
Set aside while you prepare the sauce. Heat the fat in a saucepan, fry the flour and after it dissolves add the yoghurt mixed with the fresh one and stir. Add salt, stir until thickened and cool. In another bowl, fry the chopped minced meat, add finely chopped onions and cherry tomatoes - whole.
Season with chopped basil and parsley, add salt, stir and after 5 minutes cool the mixture. Arrange the aubergines in a tray lined with a sheet of parchment. Spread a tablespoon of béchamel sauce and the same dose of meat stuffing on them. Roll up the rolls and attach with sticks. Preheat oven to 200 degrees and bake for 10 minutes. Cool, arrange the rolls on a plate, serve and enjoy eating.
