Required products :
1-2 eggplant
tomato sauce
high-fat liquid cream
butter
salt
yellow cheese (you can use parmesan)
For the filling:
250 grams of ricotta
peel of 1 lemon
juice of 1/2 lemon
1 teaspoon chopped thyme leaves
1/4 teaspoon salt
breadcrumbs
Preparation :
Cut the aubergines into thin pieces lengthwise. Sprinkle them on both sides with salt, put them in a colander and leave for 1 hour. Then drain the liquid and arrange the pieces on paper.
Heat butter in a suitable pan (about 2-2.5 cm to be melted), fry the aubergines on both sides for about 3-4 minutes. Take the finished ones out on paper or put them in a colander so that the excess fat can be removed.
Make the filling. Mix the ricotta with the breadcrumbs, add the grated lemon peel, citrus juice, thyme and salt.
Preheat oven to 210 degrees.
Put a thin layer of tomato sauce on the bottom of a pan or other suitable dish.
At one end of each of the aubergines put a little of the stuffing and form rolls, which arrange in the pan. Put a little cream on them and bake the dish in the oven for about 20-25 minutes.
Before serving, sprinkle with grated cheese.
